I love roast potatoes, but generally I don’t have the patience to make them.  I came across this recipe on the Pioneer Woman’s website and decided to try it, to prove to hubby I can sometimes make something in the kitchen! I just boiled the potatoes in the microwave instead of on the stove.  We had some sea salt and a bottle of mixed spices, so those went on top of the squashed potatoes and then they went into the oven.  (I didn’t peel the potatoes)


It was a big hit!  It bakes crispy enough so that the kids could eat it with their hands.
